Low Carb Green Smoothie Recipe

Hey there friends! I hope you’ve had an amazing week. I can’t believe how quickly this week has flown by here. There has been so much work going on here and some fun activities as well…plus a low-carb green smoothie recipe I want to share with you.

We’ve been working on some design projects around our house and this week was busy because we had a new fireplace built in our living room and carpet laid in our master bedroom and closet.

As you can guess, that meant that we had to move everything out of our bedroom…then back in again. Look for some before and after pictures of the master in the future. So, without further ado, let’s jump into the Friday Favorites!

1. The First Snow

I’m not sure what the weather is like in your neck of the woods, but here in southwest Missouri, it’s cold! We had a dusting of snow and ice earlier this week and it was enough for the kids to get a snow day.

Snow is not usually one of my favorite things because I really don’t like to be cold. But this year I’m trying hard to embrace all of the seasons.

Even the ones that are not summer.

2. Eating At Ms. Gilmore’s Tea Room

That’s me and my sweet Mom in the photo above. (My daughter, Emma, told me the jacket I’m wearing is a Teddy Bear jacket. That explains why it’s so soft and cozy. You can get one here.)

I had a nice time eating lunch with her and 3 of my aunts and cousins last Saturday at this quaint tea room.

I had the Betty Gay Crepes, which were filled with roasted chicken, onion, swiss, and mozzarella cheese and topped with creamy mushroom sage sauce. My mom had the Savage Juliet Quiche.

Afterward, we walked around downtown Springfield, peaked in a few boutiques, and tried an amazing chia tea.

3. A Warm Fireplace

Fortunately, our new fireplace couldn’t have come at a better time. We sure are enjoying the warmth and coziness!

4. Low Carb Green Smoothie Recipe In A Nice Glass

Each afternoon I crave a green smoothie to break my fast. It wasn’t always this way.

One day this week I decided to pull out all the stops and enjoy my smoothie in a beautiful glass goblet that was given to David and me on our wedding day, over 25 years ago.

As you can see, Max joined in on the fun! Whenever there’s food involved, Max is not too far away. I’m not sure where Rudy (our other Boston Terrier) was when I took this.

Low-Carb Green Smoothie Recipe

My low-carb, keto-friendly green smoothie recipe is simple and yummy. I add the following ingredients to my NutriBullet and blend everything until it’s nice and smooth. (I don’t always add the avocado but it makes it extra creamy.):

  • a scoop of high-quality protein powder – I love this one (pictured).
  • 1 cup of unsweetened coconut milk
  • 1 cup of baby spinach
  • 1/2 an avocado
  • 2 tablespoons of peanut butter or other nut butter, such as cashew or almond
  • a few ice cubes

5. Playing Tennis With Friends

Sunday I played tennis with a couple of friends and it was super fun. Since before Lyme, I haven’t exerted myself that hard so it was a challenge for sure. And I’m not gonna lie…I’ve been sore all week and my right arm and hand are barely functional right now. ha

Because of this, you might think it strange that I’m naming this as one of my favorites but it made me feel strong to get outside and be able to play…even if I’m a complete beginner and I’m literally just now learning. Because I am. 

But it was so much fun, you guys.

  1. I have done avocado and spinach smoothies but need to try this one with the protein powder, coconut milk and nut butter. Yum!
